Cucumber Sandwich


This is super easy to make and very tasty, it could work as a quick lunch or a big snack, however you want it 🙂

Ingredients:

1 large cucumber

2 Medium sized plum tomatoes

1 Avocado (preferably Hass)

2 tsp of lemon juice

1 tbsp of Extra Virgin Olive Oil

1/4 tsp of cayenne pepper

1 tsp of parsley flakes

couple of cilantro leaves (for garnish)

Pinch of salt

Preparation:

Peel your cucumber and cut in half lenght wise, take the seeds out with a spoon, and season with a little salt, so that it looks like this:

Dice your the tomatoes and avocado into cute little squares, mix in the rest of the ingredients, it will look colorfull and yummy like this:

And finally have fun filling up your cucumbers with this tasty mix, and garnish with cilantro leaves.

Wasn’t that as easy as 1-2-3?????
