Fancy Sprout Salad


Super easy to make and really fancy too, I mean just look at it. This was today’s lunch and it was awesome, a great recipe for people who like it raw 🙂

Here is what you need:

1 cup of shredded zucchini

1 cup of shredded yellow squash

1 cup of shredded carrots

1 cup of crunchy sprouts (lentils, green peas, azuki beans)

Juice of 1 lemon

1/2 tsp. white vinegar

2 tbsp. Extra Virgin Olive Oil

1 tbsp. Herbes de Provence (parsley, marjoram, poppy seeds, thyme, tarragon)

1/2 tsp. of salt

1 tsp. of parsley flakes (garnish)

1 avocado

Just do this:

Mix everything together in a bowl, shop your avocado and place it on the side and there you have it, can’t be easier than this.
