Coconut French Toast

If some people still think that us Vegans are missing out on great food they are sooo wrong, and this lovely work of art proves it 100%.

This was my breakfast this morning, super easy, super yummy, super nutritious, super superb.

You need:

8 slices of bread (I use Ezequiel Bread)

1 cup of almond milk

2 tbsp. os silken tofu

2 tbsp. shredded coconut

Pinch of nutmeg

1 tsp. cinnamon

1 tsp. of vanilla extract

Coconut oil for grilling

Pure Maple syrup

Your choice of fresh berries


-Mix the almond milk and the tofu to form a paste (you can either do it by hand or by using an electric hand blender)

-Add the cinnamon, nutmeg, vanilla and shredded coconut

-Lightly oil a large skillet or griddle with the coconut oil, dip the bread into the mixture making sure both sides are covered, cook over medium-low heat for about 4 minutes on each side or until brown.

-Garnish with fresh berries and maple syrup

Serves 4
