Red Lentil Soup


Another perfect dish for this season, and great recipe for VeganMoFo, it’s very nutritious, and easy to make I ❤ IT and I hope you do too!

You need:

1 cup of red lentils(washed)

3 cups of water

1 cup of crushed tomato sauce

1 cup of chopped
tomatoes

½ cup of chopped
carrots

½ cup of chopped mix peppers

½ cup of chopped onion

1 garlic clove (finely minced)

1 tsp. of cumin

1 tsp. of paprika

½ tsp. Black pepper

1 tbsp. of oregano

2 tsp. of salt

Fresh parsley to
garnish

Preparation:

-Heat the oil in a
saucepan and add the peppers, onion, garlic, and tomatoes, let it caramelize
for about 2 minutes.

-Add all the spices mixing
constantly for another 2 minutes.

-Add the lentils,
carrots, liquid (water and tomato sauce) and salt.

-Bring it to boil,
reduce the heat, and simmer for about 25 minutes (until lentils soften)

DONE!

Serves 4
