Roasted Veggies with Tempeh


I love this recipe, its super quick and easy, and a very good source of protein, you can have it as a heavy lunch or as dinner.

You need:

8 oz of fully cooked organic tempeh

1 zucchini

1 yellow squash

1 green pepper cut in thick strips

1 red pepper cut in thick strips

1 onion cut into wedges

3 carrots cut in chunks

3 tbsp. of Extra virgin olive oil

3 tbsp. of Balsamic Vinegar

4 tbsp. of soy sauce

1 tsp. black pepper

4 avocados

Fresh parsley or cilantro (garnish)

Instructions:

– Preheat the oven to 400 F

-Mix all the ingredients but the avocado in a deep baking pan.

– Bake covered for about 15 minutes, uncover and switch the oven to broil (Hi) and broil for about 5 minutes

-Nicely cut the avocado, arrange on a plate and place your veggies, garnish with parsley or cilantro.

That was soo quick, and it’s really yummy too, ENJOY!
