Effortless Salad


This salad is super easy to make (as you can see by it’s name) perfect for those days when you don’t feel like spending a lot of time in the kitchen, and it’s very tasty.

You need:

½ cup of edamame

½ cup of green peas

½ cup of diced carrots

½ cup of cut corn

1 tbsp. of basil pesto

Alfalfa sprouts

1 avocado

1 lemon

Extra virgin olive oil

Salt

Pepper

Dried parsley flakes

Steps:

-Cook the edamame for about 7 minutes and remove skin.

-To make the basil pesto simply put a basil bunch into your blender add olive oil (forming a paste), and season with a little salt.

-Cook the rest of the veggies, and season with basil pesto, salt pepper, olive oil and parsley.

-Season your sprouts with lemon juice and salt, slice your avocado, and ensemble everything on your plate, have fun with it.

Makes 2 servings
