Vegan Mofo: Raw Apple Pie


If you thought you knew everything about Apple Pies, this will change the way you look them FOREVER. It’s just sooo delicious I can’t even begin to describe it, you have to try it out for yourself, plus it’s the easiest thing to make, it took me
like half an hour. Check it out:

For the crust:

2 cups of walnuts

¼ cup of dates

3 tbsp. of shredded coconut

For the filling:

3 cups of apples

Juice of 1 lemon

3 tbsp. of pure maple syrup

1 tbsp. of apple butter

2 tsp. of cinnamon

1 tsp. of vanilla extract

Dried cranberries to sprinkle on top

Putting it all together:

-Soak the walnuts and the dates together in warm water for about 20 minutes, until the walnuts are a
little soft.

-Meanwhile thinly slice your apples, and mix with all the ingredients (lemon, apple butter, cinnamon,
and vanilla).Let it stand for about 5 minutes.

-Remove all the water from the walnuts and dates, and pulse them into the food processor along with the shredded coconut until the mixture
comes together (like dough).

-Press the dough into your pie dish, place the filling on top (make it pretty) and the sprinkle with the cranberries.

You can place it in the fridge to chill for like 10 minutes (that’s only if you can resist from eating it at once).

Makes 8 servings

  1. Holy moly, does that look good! You know, I always thought raw would be like eating salads all the time. Which I like, naturally, but couldn’t see doing for every meal, every day. You’re really changing the way I view that term. I’m… intrigued 🙂
