Oat Noodles with Veggies


I was buying some groceries at a Chinese market near my place and I stumbled upon Oat noodles, I had never tried them before but it sounded interesting, and I’m glad I got them, they are so full of flavor and just 140 cal. per serving which is great. So I decided to make a veggie stir-fry
and place them on top of the noodles. It was super quick, like 15 minutes or so, and it was the perfect pairing.

You need:

1 box of Oat noodles (of course)

1 Broccoli head

1 cup of sliced asparagus

½ cup of mushrooms (thick slices)

1 cup of mixed pepper strips

½ cup of chopped scallions

1 tbsp. of sesame oil

2 tbsp. of soy sauce

Sesame seeds for final touch.

Steps:

-Cook the noodles according to the instructions, approximately 6 minutes

-Place a large skillet over medium-high heat, add sesame oil and scallions and let it caramelize for about 2 minutes.

-Add the remaining ingredients, and let them cook for about 5 minutes

-Place noodles on a plate or bowl, put the veggies on top and sprinkle with sesame seeds.
