Yummy couscous with artichoke hearts, and veggies, it’s super easy to make and it will only take you like 15 minutes.
Here are the ingredients:
1 cup of Israeli couscous
6 oz. of marinated artichoke hearts
½ cup of diced Chinese eggplant
½ cup of diced zucchini
½ cup of diced yellow squash
½ cup of mushrooms sliced in half
¼ cup of chopped onion
¼ cup of chopped red peppers
2 tbsp. of Extra Virgin olive oil
Salt
Pepper
Parsley flakes
Mix of Herbs (your choice)
Steps:
-Cook the couscous according to instructions, for about 7 minutes
-Meanwhile place a large skillet over medium-high heat, add the oil, onion and garlic and sauté for about 2 minutes. Add the remaining ingredients, season them and cook for about 8 minutes, mixing it constantly.
-Remove couscous from heat, drain, and mix with the vegetables.
