I remember when I was little my mom used to make the most delicious pasta sauce using just regular milk and tomato paste, I wanted somehow to have that experience again, but this time doing it the vegan way, this was the result, a rich and flavorful sauce that will make your taste buds dance in joy. Believe me I love this more than the other one (sorry mom) not just because of the flavor but because I know no animals were harmed in the process of making this super delicious dish.
1 box of whole-wheat pasta
1 ½ cup of almond milk
1 cup of Daiya cheddar cheese
1 ½ tbsp. of almond butter
½ onion finely chopped
½ cup of mixed bell peppers
¼ tsp. of paprika
1 tsp. of garlic powder
Pinch of red pepper
Dried parsley flakes
¼ cup of sliced almonds
2 tsp. of extra virgin olive oil
-Cook the pasta according to box instructions.
-Meanwhile place a large sauce pan over medium-high heat, add the olive oil, onion, and peppers, and caramelize until translucent. Add your spices, and mix in the almond butter, stir continuously for about 2 minutes and pour the almond milk. Bring to a boil
-Add the cheddar cheese, let it melt and thicken.
-Finally drain the pasta, place on a plate and pour the cheesy Alfredo on top. Garnish with parsley flakes and almond slices.
