Three-Bean Vegan Chili


So flavorful and comforting, a tiny bit spicy but truly amazing, besides it’s super easy and it only takes a few minutes to make. This is what you’ll need:

For the TSP:

½ cup of textured soy protein (TSP)

1/3 cup of hot water

1 cup of crushed tomatoes

1 cup of chopped red peppers

½ cup of chopped onion

1 garlic clove

1 tsp. of chili powder mix

½ tsp. of ground cumin

½ tsp. of paprika

1 tsp. of salt

¼ tsp. of red pepper

Pinch of black pepper

Extra virgin olive oil

For everything else:

½ cup of dark kidney beans (try to get them low in sodium)

½ cup of black beans

½ cup of small white beans

1 tbsp. of oregano

1 tbsp. of marjoram

Add more salt and black pepper if you want.

Steps:

-To prepare the Soy protein, basically pour the 1/3 of boiling hot water over the Textured Soy Protein and let it stand for about 5 minutes.

-Meanwhile place a large pan over medium-high heat, add 2 tbsp. of olive oil and caramelize the chopped onion, red bell pepper, and garlic. Add the TSP, and crushed tomatoes. Mix well, and season with chili powder, paprika, cumin, red pepper, black pepper and salt. Let it cook for about 5 minutes.

-Add the beans, oregano, and marjoram and cook for about 15 minutes, mixing occasionally.

-Garnish with some scallions and Enjoy!

Serves about 3:)
