Effortless Green pea-Broccoli Soup


Nothing better than a warm and tasty soup for those cold winter days. It’s flavor and delicious aroma will have everyone wanting more.

Ingredients:

2 cups of green peas

1 cup of  broccoli

1/2 cup of chopped bell pepper

1/2 cup of chopped onion

2 garlic cloves

2 cups of water

1 tbsp. of peanut butter

1 tbsp. of  vegan butter (I used Earth Balance brand)

1 tbsp. of extra virgin olive oil

1 tsp. of salt

1/2 tsp. of pepper

1 tbsp. of marjoram

1 tbsp. of dried parsley flakes

1/4 cup of Daiya Mozzarella cheese (optional)

Preparation:

-On a pot at medium-high heat add the olive oil, onions, peppers, and garlic, followed by the vegan butter and let it brown for about 3 minutes.

-Add your peas, broccoli, water, and spices. Bring it to boil and let it cook for about 8 minute or until the veggies are soft.

-Using a hand mixer, puree the soup until it has a rich and thick consistency and add the peanut butter. (If you don’t have a hand mixer you can always use your blender, puree it, and bring back to heat.) Let it cook for another 5 minutes so that all the flavors come together. (If adding the cheese this is the time to do it.)

Serve and Enjoy!

Makes 3 servings
