Chocolate Banana-Date Muffins


Ok what’s not to love about these? I think they are the healthiest muffins out there, no oil, not too sweet, whole wheat flour…Guilt free dessert overall, and plus you can make them in no time.

Ingredients:

3 ripe bananas

4 large medjool dates

1 cup of whole wheat flour

1/2 cup of non-dairy milk( I used almond milk)

1 tsp. of pure vanilla extract

1 tbsp. of raw cocoa powder

1 tsp. of baking powder

1/2 tsp. of salt

2 tsp. of agave nectar

Preparation:

-Preheat the oven to 400 degrees.

-In a blender, place the banana, almond milk, cocoa powder, vanilla, agave, and dates and puree for about 3 minutes.

-In a large bowl, mix the flour, salt and baking powder. Combine the flour with the banana puree and mix well.

-Grease your muffin dish (I used coconut oil, but you can use any kind) and pour the mixture. Garnish with a slice of banana and a tiny bit of brown sugar (to caramelize the banana).

-Bake for 25-30 minutes.

Makes 8 small muffins, about 142 calories each:)
