Simple and Delicious
3 cups of chopped baby spinach
3 cups of your blend of mushrooms ( I used wood ear, shiitake, baby bella, and oyster)
1 cup of cooked chick peas
1/2 cup of chopped red bell pepper
1/4 cup of chopped onion
1 minced garlic clove
Extra Virgin Olive Oil
-On a skillet at medium-high heat sautee the bell pepper, onion, and garlic. Add the mushrooms and let it cook for about 5 minutes.
-Add the spinach and chick peas and let it cook for another 5 minutes so that all the flavors come together.
-Finally sprinkle salt, pepper, and parsley and you are set to go!
