This was my dinner today and it was one of the best dishes I’ve had!! Soo flavorful and light. The walnut-dulse paste, zucchini and tomato sauce make an incredible combination and it only took me about 20 minutes to make. Man!! this is the power of RAW!!! Give it a try, I promise you won’t be disappointed;)
1 long yellow squash
1 long zucchini
Walnut-Dulse Pâté for filling
3 Roma tomatoes
1/4 cup of chopped red bell pepper
1 tbsp. of chopped leek
1 tsp. of Olive oil
1/2 of a small garlic clove
1/4 tsp. of red pepper
1/4 tsp. of parsley flakes
Salt and pepper to taste
Alfalfa or Clover sprouts to garnish
-Thinly slice the squash and zucchini lengthwise. Season each one with a little bit of salt.
-Evenly distribute the walnut Pâté on each slice and roll it in.
-Place the tomatoes, leek, garlic, bell pepper, oil and spices into the food processor and mix until all the ingredients are crushed.
Pour about 3 tbsp. of the sauce on a plate, place the raw-nnelloni on top and garnish with the sprouts
