Semi-raw Tacos

A few weekends ago I had a couple of friends coming over and prepared a promising raw vegan food party for them. Some of the dishes were cucumber sandwiches, raw pecan brownies, green smoothie shots…and really tasty raw tacos prepared by a friend. Everyone was asking for recipes and taking notes which for me was the best part of the evening.

So here is my version of semi-raw tacos, if it wasn’t for cashew ‘cheese’ these would be totally raw, but the “kick” this creamy ‘cheese’ gives to the tacos is awesome!

You need:

Kale leaves

1 cup of raw walnuts (soaked overnight)

1/4 cup of raw almonds

1 tsp. of cumin powder

1/2 tsp. paprika

1/4 tsp. of cayenne pepper

Juice of 1 lime

1 tbsp. of raw coconut aminos

1/4 tsp. of salt

1/2 tsp. of dried parsley flakes

Shredded cashew cheese

And any toppings you want, I used strips of bell pepper, scallions and cherry tomatoes.


-The night before start by soaking the walnuts in filtered water (make sure the water covers them completely)

-When walnuts are ready, drain them and place them in the food processor along with almonds, spices, lime juice and aminos. Pulse for about 5 minutes stopping and mixing constantly, so that all the spices are well distributed.

-Thoroughly wash your kale leaves, and ensemble tacos. Add your favorite toppings and enjoy!
