Vegan Queso


Rich in flavor and super versatile healthy cheese alternative.

Here is what you’ll need:

1 cup of raw cashews (soaked overnight)
1 1/4 cup of filtered water
3 tbsp. of agar flakes
1/4 cup of nutritional yeast
Juice of 1 lime
1 tsp. of sea salt
1/2 tsp. of garlic powder

Prep:

-Soak the cashews in filtered water (covering completely) overnight. Rinse and drain.

-Bring 1  1/4 of  a cup of water to a boil in a small pot and add the agar until is dissolved completely.

-I placed the drained cashews into my wonderful Vitamix ( a regular blender is fine as well) with all the ingredients, poured in the agar mixture, and blended at low speed then high until very smooth.

-You can add  any other flavorings like cracked pepper, I used garlic and herb seasoning.

-Pour into a glass dish (oiled). Refrigerate until firm. Use within a few days.

-Grate this cheese to top your favorite dishes or you can even use it as cream cheese.
