Potato Picadillo

This is a traditional Costa Rican dish that I grew up eating.  It is a very simple recipe and it is often served with corn tortillas or rice.  In this case I made a  “gallo de picadillo de papa”, using potatoes and beef-less ground beef. Technically anything you put on a tortilla will become a “gallo.” We simply fold the tortilla just kind of holding the contents in it.  Give it a try!

You will need:

1/4 cup of chopped onion

1/4 cup chopped bell pepper

1 garlic clove (minced)

2 large ripe tomatoes

1 pack of beef-less ground “beef” ( which I got at Trader Joe’s)

3 large potatoes

Baby bella mushrooms (sliced)

1/4 cup of pizza sauce*

1/3 cup of water (or enough for potatoes to cook)

1½ tbsp. of seasoning (I used Bell’s salt-free)

2 tbsp. of Extra Virgin Olive Oil

1 pack of corn tortillas

Minced cilantro to garnish


– Heat oil in large non-stick pot over medium-high heat. Add onion, garlic, and bell pepper. Sautée until onion is soft, about 5 minutes. Add beef-less “meat” and sautée for another 5 minutes.

– Add all remaining ingredients lower the heat to medium-low, and simmer until the potatoes are thoroughly cooked. Stir occasionally for about 30 minutes. Season with salt as needed.

– Heat up corn tortillas and garnish with cilantro.


* I like to use pizza sauce because it’s already seasoned with different spices, but you are welcome to use any tomato sauce you like.  Just make sure to read all the ingredients to avoid hidden animal products:)
